Just because you can do something, doesn't mean you should. Hiring someone who has the general experience in a service is fine, but you're going to get a much better experience if you hire someone who specializes.
Why? The same reason a basketball player doesn't automatically excel at baseball. And the same reason a proctologist doesn't deliver babies. And a still-life painter probably isn't painting pets or people. It's the whole reason a contractor hires subcontractors to build a house.

When you're choosing a photographer for a niche session, why not choose someone who specializes in what you're looking for? Contrary to popular belief, not every photographer is the best choice for every job.
Like any craft out there, professionals specialize in order to be able to better serve their clients. It doesn't mean that a general professional can't do the job, it just means that you'll probably get better results with a professional who specializes in the specific job you're hiring for.
It's okay to not be everyone's specialty. It's okay to refer a job out to someone who may be better suited for the position.
